Rice is an important staple cereal for many households in Ghana and per capita consumption has shown steady increase over the period. The per capita consumption between 1985 and 2015 is estimated to have increased from 12.7 kg/year to 32 kg/year (SRID, MOFA, 2015). Increased consumption of rice has been linked to rapid urbanization and changes in food consumption patterns. Both locally produced and imported rice are sold on the same market in rural and urban areas. Consumers want the choices of food commodities that their levels of income, lifestyles, and media exposure make them aware and possible. Preferences of consumers are not static but rather dynamic. Consumers’ preference keep changing. In light of these, this study therefore specifically examines the factors that influence consumers’ preference for rice: the locally produced versus the imported, in the Ga East Municipal, Greater Accra Region, Ghana. Well-structured questionnaires were used to interview 300 rice consumers who were sampled across the municipality. Descriptive statistics was employed to analyze socio-economic characteristics of consumers, consumer knowledge and also buying behavior of consumers. Factor analysis is used for dimensionality reduction to extract the factors (quality attributes) that influence consumers buying decisions in buying rice. Multinomial logistic regression model was employed to analyze socio-economic factors and also factor attributes from factor analysis to identify the factors that influence consumers’ buying decisions and preferences for rice. From the study results, three (3) groups of respondents who consume rice showed up: those who consumed only local rice, those who consumed only imported rice and those who consumed both combinations of local and imported rice. Also, age, marital status, level of income as well as level of education of respondents were the major socio-economic factors that significantly influenced consumers’ preference for rice. Again, rice related attributes that showed significant influence on consumer’s preference for rice were packaging quality, swelling capacity, stickiness of grains after cooking, percent brokenness of grains, availability on the market, price and degree of whiteness. Similarly, other attributes such as texture, cleanness from foreign material and taste showed significant influence on consumers’ preference for rice. Categorically looking at the level of significance of these factors indeed shows their influence on decision making and preference for rice in the municipality. There must be a need therefore for stakeholders to bring to bear improvement in the area of local rice production and also along the rice post-harvest chain. The beneficiaries will be local rice producers as well as rice consumers in the municipality and region at large.
